Chia Seed Pudding

Organic chia seeds (mix of black and white varieties)
1 can of organic coconut milk (sweet or unsweetened)
Boiling water
Cereal bowl
Cut mixed fruit or berries
Sliced and blanched almonds
 
Fill cereal bowl with 1/4 chia seeds
Add boiling water (enough to cover chia seeds)
Stir
Add entire can of coconut milk
Stir
Let stand until cool
Refrigerate until firm
Top with cut fruit and almonds
 
(Optional:  Drizzle with organic honey)

 

 

Ice Cream with Green Tea

Breyer’s “Natural Vanilla” ice cream
Japanese matcha (powdered green tea)
Sliced and blanched almonds
(Optional:  mixed berries)
 
Two scoops of vanilla ice cream into medium to large serving bowl
Sprinkle matcha onto ice cream
Sprinkle almonds onto ice cream
(Optional:  add mixed berries)
 
Creative and healthy way to enjoy a classic!

Blueberries with Applesauce

One jar of unsweetened apple sauce
One package of fresh blueberries
 
Pour apple sauce into medium to large serving bowl
Pour just rinsed blueberries on top of apple sauce
(Optional:  Add mint leaf and/or a few raspberries)
 
Great for entertaining or dessert for two!
